Ingredients

500g mixed courgettes

3 garlic cloves, grated

100ml olive oil

juice of 1 lemon

½ small pack mint

Method

On half a kilo of cooked (barbequed) zucchini, dress it after cooking with a dressing made up of: 1 garlic clove, finely grated, 100ml olive oil, juice of 1 lemon, salt and pepper, 3 tbs finely chopped fresh mint.
